Gut-tastic Pisco Sour Mocktail

Bright and packed with flavour, this mouth-watering drink will be a fast-favourite this season.

Ingredients (2 servings)
Syrup
1 tsp lemon myrtle flakes
1 tsp of lime
8 pepper berries
1/2 cup raw honey
2/3 cup room temperature water

Sour
60 ml freshly squeezed lime juice
30 ml Raw Honey Probiotic Concentrate- Lemon Flavour
2 tsp of raw honey
2 egg whites or 4 tbsp aquafaba
10 ice cubes
Soda Water

Instructions
Add syrup ingredients except honey to a small saucepan on low heat. Allow the syrup to come to a boil, then turn off your element and allow the syrup cool to room temperature. Strain the lemon myrtle flakes using a sieve or muslin cloth before adding and stirring in the raw honey.

Add the lemon juice, syrup, raw honey, Raw Honey Probiotic Concentrate - Lemon Flavour and egg white or aquafaba to a cocktail shaker. Shake for 20-30 seconds until the egg white/ aquafaba is emulsified and the mixture has gone creamy.

 Add ice and shake again for 20 seconds until the mixture is cold and the shaker starts to frost. Strain into a glass of your choice and top with soda, pouring slowly to avoid fizz. Garnish with dried citrus.
